Started by Ian Paech, this kind and intrepid soul had no experience in food service when he decided to quit trading at one of the big banks to apprentice at Pizzeria Libretto, in Toronto. He learned what was needed in order to succeed in the restaurant business at the bustling pizza place.
For Paech, quality trumps everything, “all our ingredients are natural, nutrient-rich and fresh-never-frozen.
